Summer BBQ Sides: Kale and Cabbage Slaw
2 Cups chopped kale
2 Ears of corn, husked and grilled
1 Cup thinly sliced red cabbage
1/2 Fennel bulb minced
1/4 Cup non fat Greek yogurt
1 Tsp Apple cider vinegar
1 Tsp Honey
1 Tsp Dijon mustard
1 Tsp lemon juice
salt and pepper to taste
Step 1: Combine kale, cabbage, fennel and grilled corn in a bowl and mix.
Step 2: In a bowl combine ingredients for dressing and whisk until thoroughly combined. Drizzle over the slaw veggies and mix until fully coated. Let sit until ready to serve. Season with salt and pepper and enjoy!
