Winter Citrus Salad with Honey Vinaigrette

Citrus salads are a great way to brighten up winter meals and to add some variety to bleak and boring office lunches. This salad combines the tartness of grapefruit with the sweetness of tangerine and oranges for a light and tasty lunch.

1 Pink grapefruit

1 Tangerine

1 Orange

1 Blood Orange

1 Shallot

2 cups mixed greens

1/2 cup grape tomatoes, halved

1 tbsp chopped walnuts

1 tsp minced tarragon

For dressing:

2 tbsps honey

1 tbsp sherry vinegar

1 tbsp mustard

3 tbsp olive oil

3 tbsp red wine vinegar

Step 1: Peel all the oranges and slice into rounds about 1/2 inch thick. Slice the shallot thinly and soak for 10-20 minutes in red wine vinegar.

Step 2: Whisk together honey, mustard and vinegar and season with salt and pepper. Slowly whisk in the oil in one thin stream until the mixture is emulsified.

Step 3: Toss together greens, tarragon, shallot, walnuts and lightly dress with the honey vinaigrette. Assemble citrus rounds on the bed of greens and serve.
