Heirloom Tomato & Whipped Ricotta Toast
4 heirloom tomatoes of varying colors and sizes1 loaf of Italian bread
2 cups whole milk ricotta cheese
1 tbsp finely chopped chives
1 tsp chopped raw garlic (about half a medium clove)
4-6 sprigs of thyme (leaves removed from sprigs)
1 tsp lemon juice
1/2 tsp lemon zest
1/4 tsp salt
1/2 tsp ground black pepper
Coarse sea salt to taste
Step 1: Preheat oven to 350 degrees and slice the Italian bread in half horizontally. Toast bread for about 5-7 minutes, until lightly browned but still soft in the middle.
Step 2: In a medium mixing bowl, combine ricotta, chives, garlic, 2 sprigs of thyme, salt and black pepper. Whip with a whisk until all herbs are combined and the mixture is light and fluffy.
Step 3: Spread a layer of the mixture thoroughly on one half of the toasted bread, and arrange the slices of tomato over the ricotta.
Top with remaining thyme leaves and sea salt to taste.
