Zucchini Mushroom Roses
1 Sheet Puffed Pastry
1/4 Cup Goat Cheese
1 Zucchini, Sliced Very Thinly on a Mandoline
5-8 Cremini Mushrooms, Sliced Very Thinly on a Mandoline
Salt and Pepper
Chopped Parsley for Garnish
Step 1: Preheat oven to 350 degrees. Roll out puffed pastry using a rolling pin until about 1/2 centimeter thick and cut into squares about1.5 inches by 1.5 inches.
Step 2: Lay 1 slice of zucchini down flat and sprinkle with salt and pepper. In a thin layer, lay down 4-6 pieces of mushroom on top of the zucchini. Roll up the zucchini into a rose shape.
Step 3: Spray a mini muffin tin with Pam spray and place the squares of puffed pastry into the muffin tin, making sure to push down the corners of the dough into the corners of the muffin shape. Place about 1/2 tsp of goat cheese in the bottom of the puffed pastry and place the zucchini/mushroom rose into the dough on top of the goat cheese.
Step 4: Bake for 20-25 minutes. Serve with chopped parsley and enjoy!
