Spinach & Caramelized Onion Salad with Parmesan & Walnuts

4 Cups spinach, washed and dried

2 Yellow onions, sliced thinly 

1/2 Cup walnuts 

1/2 Cup Parmesan cheese, shaved

1 Tsp brown sugar

1 Tsp apple cider vinegar

For Dressing:

1/2 Cup Olive oil

2 Tbsps spicy mustard

2 Tbsps brown sugar

1 Tbsp champagne vinegar

Step 1: To make the dressing, combine all ingredients (except the olive oil) in a small saucepan over low heat. Whisk to combine, and continue whisking until the sugar has dissolved. While whisking, slowly add in the olive oil in a thin stream. Let sit on low heat until ready to serve.

Step 2: Get started on the onions. Heat a saute pan over medium-high heat and drizzle with olive oil. Add in the onions and let caramelize until they reach a deep brown brown color. Make sure the pan doesn't dry out, as that will cause the onions to turn black, so continue adding oil as needed. Sprinkle with salt and add the brown sugar and apple cider vinegar, continue stirring until the sugar has dissolved, then lower the heat and reserve.

Step 3: To assemble the salad, toss the spinach with a very light coating of the dressing. Assemble on a plate and top with the caramelized onions, parmesan cheese and walnuts. Top with a bit of extra dressing and serve!
