Creamy Cucumber Ribbon Salad
1 Large cucumber, sliced longways on a mandoline
1/4 Red onion, sliced thin
2 Tbsps Greek Yogurt
1 Tbsp Chopped dill
1 Tsp Lemon juice
1 Tsp Red wine vinegar
Torn parsley leaves for garnish
1 Cup distilled white vinegar
1/2 Cup water
1/4 Cup sugar
Step 1: Whisk together yogurt, lemon and vinegar in a large bowl. Mix in the dill and cucumber and toss to combine. Season with salt and pepper.
Step 2: Combine vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil and let the sugar dissolve completely. Once the sugar has dissolved, in a medium bowl, pour the pickling liquid over the onions and let sit for 10-20 minutes.
Step 3: Strain the onions and combine with the cucumber salad. Garnish with parsley leaves and serve.
