Arugula and Bacon Grilled Cheese With Caramelized Onion Jam
Everyone knows that grilled cheese is the perfect comfort food for a snowy day. This recipe includes caramelized onion jam from the Gracious Gourmet, a small gourmet foods company that produces jams, spreads, chutneys and pestos that are low in fat and preservative free. This caramelized onion jam adds a layer of sweetness to the saltiness of the bacon and the pepperiness of the arugula. The combination is sweet and savory, perfect for a quick and cozy lunch.
4-6 Pieces of thick cut bacon
1/4 Cup (packed) arugula
1/4 Cup sliced fontina, Parmesan and Gruyere cheese
2 Slices thick sourdough bread
1 Tbsp "The Gracious Gourmet" sweet caramelized onion jam
1 Tsp mayo
Step 1: Cook bacon in a large skillet over medium heat until golden brown. Set aside on a bed of paper towels to drain. Remove about 1/2 of the bacon grease, but reserve some to cook the grilled cheese in. Lower the heat to low-medium.
Step 2: Begin to assemble the sandwiches. Spread the onion jam on one slice of bread, then stack the cheeses and bacon. Close the sandwich and spread mayo on the outer sides of the bread. Grill on in the same skillet that the bacon was cooked in until the cheese is melted and the bread is golden brown.
Step 3: Allow the sandwiches to cool slightly and top with arugula. Cut in half and serve with extra bacon jam.
